Thanks for trying it out, Jan! Definitely go with flour first, then flax, then panko next time, you’ll get a better coating. Good idea to steam the cabbage!

I messed up the dredging of the tofu (mixed the flour and panko together), but it still worked out. I’m not sure I’ve ever had Katsu, so I have no comparison. On the second go-round, I lightly steamed the cabbage and tossed it in a couple drops of sesame oil. Makes for a filling meal!
